The Gimblett” blends grapes from the Cabernet family, giving structure and fresh aromatics; with Merlot provides richness and mid-palate weight, and Malbec and Petit Verdot adding complexity, density and structure. It displays exotically perfumed aromatics that include ripe blackberries and red fruits, plus hints of florals and dried herbs. There is a superb clarity of flavours on the palate. Trinity Hill Gimblett Gravels The Gimblett is a blend of 42% Cabernet Sauvignon, 31% Cabernet Franc, 23% Merlot, 2% Malbec and 2% Petit Verdot from premium Gimblett Gravels sites in the Hawkes Bay area. Hand-picked fruit was destemmed, with each variety and vineyard parcel being harvested and vinified separately. Pumping over with controlled aeration took place during fermentation to gently extract colour and tannin. A post-fermentation maceration of up to 4 weeks helped improve the texture and structure of the tannins. The wine was transferred to small 35% new French oak barrels for 16 months.
