It displays exotically perfumed aromatics that include ripe blackberries and red fruits, plus hints of florals and dried herbs. There is a superb clarity of flavours on the palate. Trinity Hill Gimblett Gravels The Gimblett is a blend of 42% Cabernet Sauvignon, 31% Cabernet Franc, 23% Merlot, 2% Malbec and 2% Petit Verdot from premium Gimblett Gravels sites in the Hawkes Bay area. Hand-picked fruit was destemmed, with each variety and vineyard parcel being harvested and vinified separately. Pumping over with controlled aeration took place during fermentation to gently extract colour and tannin. A post-fermentation maceration of up to 4 weeks helped improve the texture and structure of the tannins. The wine was transferred to small 35% new French oak barrels for 16 months.
