Greywacke is a 100% organic Riesling grown at Ashmore Vineyard in Fairhall, adjacent to the mouth of the Brancott Valley in Marlborough. Hand-picked fruit was whole-bunch pressed using a low maceration press cycle, the juice cold-settled then racked to fermentation vessels. Half was inoculated in stainless steel using cultured yeast; the balance in French oak barriques where it underwent spontaneous indigenous yeast fermentation. Transferred to a stainless steel tank where fermentation was stopped, then filled into old barrels and remained on yeast lees for 6 months. "Greywacke's Riesling offers bold aromas and flavors of green apple, lime and rosemary, even a touch of peach, along with more weight and texture than most German versions. At 19.5 grams per liter of residual sugar and 12.5% alcohol, it's a rich, ripe wine, verging on full-bodied, and half of it was barrel-fermented (in older French oak), further accentuating the velvety mouthfeel."
