100% Merlot sourced predominantly from a single vineyard within the Gimblett Gravels area of Hawkes Bay.
Fruit was destemmed into stainless steel fermenters for a 5-day cold soak. Hand plunged and occasionally pumped over, then following primary fermentation kept in contact with skins until the right extraction and balance was achieved. After pressing and settling, racked to seasoned American oak and underwent malolactic fermentation.
Winemaker's Comments
Complex ripe dark berry aromas of blackberry and boysenberry combine with festive spice and savoury toast. The palate has a mouth-coating texture with strong ripe berry flavours of blackberries and boysenberries followed by a rich fruitcake spice. The mid-palate is supported by a well balanced acidity and the supple light powdered tannin structure works in harmony with a wonderful savoury finish.
