Mt Difficulty is a 100% Pinot Gris blended from Mt Difficulty's Bannockburn vineyards, Central Otago. Fruit was hand-harvested and processed in a reductive manner, with the juice settled overnight and racked clean the following morning. Fermented cool to help maximise varietal character. All the components were left on gross yeast lees for 5 months post fermentation, with weekly stirring to help enhance complexity and textural aspects.
