Mt Difficulty Long Gully is a 100% Chenin Blanc from Mt Difficulty's Long Gully single vineyard in Bannockburn, Central Otago. Fruit was ripened for as long as possible, and the, juice handled in a reductive fashion throughout processing. The wine was, racked clean and fermented relatively cool to protect, the lovely ethereal character of Chenin Blanc. The nature of the fruit, with a high, degree of acidity, dictates the style in which the wine is made. The ferment was, stopped by chilling and racking to another tank. Filtered but not, fined.
