Chardonnay sourced from the 'Escaroth' home to dedicated growers Andy and Kyna Laurie.Situated inthe Taylor Pass subregion of the Southern Valleys.
Grapes are whole-bunch pressed with only the very cloudy free-run juice going into new and seasoned French oak puncheons (500L), as well as barriques (30% new). It was allowed to ferment with wild yeasts, and left to its own devices, withoutsulphur or leesstirringthroughout maturation. Itunderwent natural malolactic fermentation in the spring, and was then rackedand bottled withoutfiltration on the2nd April 2020.
