100% Sauvignon Blanc from Marama, Waimea Plains vineyard in the Upper Moutere winegrowing region around Nelson.
Upon harvest destemmed fruit cool settled over 72 hours and racked. Fermentation with a 65% cultured and 35% wild yeast in 80% stainless steel, 20% neutral barrel fermentation. Left on gross lees.
Winemaker's Comments
Textural interest is a major component for Neudorf, and 65% wild ferment and 20% barrel fermentation has a moderating effect on the high tone nature of this variety. Aromatics of green papaya with vibrant florals and a touch of fennel. The mouthfeel of the palate is weighty, juicy and opulent, with elegant acidity lending a refreshingly cleansing spine.
