100% Sauvignon Blanc sourced from older vines on Nautilus Estate's oldest vineyard in the Renwick area of Marlborough.
Fruit is low-cropped and hand picked, then chilled overnight before being whole bunch pressed to give a very fine, balanced juice. Juice is fermented on solids in a large French oak cuve, using a non-Saccaromyces yeast, giving a warmer, slower ferment, then matured on yeast lees for 7 months. This translates to more subtle aromatics, but far more texture and intensity on the palate.
Winemaker's Comments
This premium oak-aged wine illustrates an alternative to the classic expression of Marlborough Sauvignon Blanc; this is altogether a more savoury and textural style. Handpicking and fermenting in oak cuve give "The Paper" understated aromas of citrus peel, wet stones and hazelnuts. The palate is concentrated yet subtle with a creamy texture, focused acidity and a dry lingering finish.
