100% Sauvignon Blanc sourced from Cloudy Bay's vineyards located within the Rapaura, Brancott and Renwick sub-regions of Marlborough.
After gentle pressing and settling for a period of 24 hours, the juice was racked directly to 8% new French oak barrels and underwent a slow and steady fermentation initiated by indigenous yeasts. Then rested in barrel on fine lees until Spring and whilst in barrel, the wine underwent a partial malolactic fermentation. Careful maturation in the cellar is what creates the unique texture and acid profile of Te Koko.
Winemaker's Comments
A intriguingly unique and sophisticated premium style of New Zealand Sauvignon Blanc, achieved through wild fermentation and ageing in old French oak. It has aromas of lemon thyme, mandarin blossom and stonefruit combined with ginger spice, toasted nuts and savoury tones, all underlined by exotic tropical notes most typical of this aromatic varietal. The multi-layered palate is creamy and textured, balanced by a clean, mineral acidity. A wine of persistent flavour and intensity.
